Well.
Today has been…one of those days. The solution to having one of those days? Rest and relaxation. At least it was this time! I spent today doing absolutely nothing. Well, okay, I played around online, did some research, watched some tv, took a photo or two, and made fried apple pies.

What? *bats eyelashes* I like pie. I like it baked, and I like it fried. It’s a rarity around my house, so when it happens, I enjoy it. ๐ I use the pie filling recipe via Paula Deen, using whatever apples I happen to have around. Last time it was apples from the tree outside, today it was Granny Smith. However, I don’t like using refrigerated pie crusts or biscuits or any of that nonsense. I make the crust from scratch. It tastes better (I think it does, at least!), and it’s super easy to make!

Pie crust recipe:
2 C all purpose flour
2/3 C cold butter (diced/sliced/cut up into small pieces)
1/4 teaspoon salt
4-5 tablespoons of cold water
You’ll also need a food processor or mixer.
Note:ย I only used 1/2 a cup of butter this time – I like butter, but I can’t handle super rich foods like I used to. I know, sadness. Still tasted good, though!
Mix the flour, salt, and butter together in the food processor until it is blended well. Add 4-5 tablespoons of water and mix again on pulse.
Roll out over a lightly floured surface to about 1/8 of an inch, and cut with a medium to large round cookie cutter, depending on how bit you want the pies to be.
Place a tablespoon of the filling in the middle, moisten the edges with water, fold one side over, and seal by pressing the edges together with a fork. In order to save time, I used the medium sized Pocket Gourmet Dough Press that’s been at the back of the kitchen cabinet for goodness knows how long. I know it’s been years. Many. Years. Came in a box of three (small, medium, and large!), and has never been used.
*side note – What is up with me and unused products? Something’s wrong with that…
In a large skillet, heat oil on medium-high. You can cook 2-4 pies at a time depending on the size of your skillet, just make sure that it is not overcrowded. Cook for 3 minutes on each side, or until they are golden brown. Transfer to paper towels, and enjoy!
